Main Dishes

Chicken Parisian – tender chicken breast pieces in a delectable white wine-mushroom sauce

Roasted Filet Mignon with Brandy Peppercorn Sauce – delicious slices of roasted beef filet served with Diane’s signature Brandy Peppercorn sauce (add $2 per person to buffet price)

Crab Cakes – lump crabmeat, fresh herbs and Dijon mustard combined into one of Diane’s signature recipes; served with a Creole Remoulade (add $2 per person to buffet price)

Beef Stroganoff – tender strips of beef and mushrooms slow-cooked in a rich sour cream sauce

Florentine Lasagna Rolls – spinach and ricotta rolled in lasagna noodles and baked in a roasted garlic and tomato sauce

Quail with Cherry Sauce – delicate whole quail, pan- browned then simmered in a rich cherry and red wine sauce (add $1 per person to buffet price)

Baked Salmon Stuffed with Spinach – fresh salmon fillets stuffed with delicate spinach filling

Rosemary Lamb Chops – plump lamb loin chops seasoned with fresh rosemary and grilled to juicy perfection

Parma Rosa Chicken – tender chicken breasts sautéed with Italian seasoning then topped with fresh-sliced tomatoes, mozzarella cheese and creamy Parma Rosa sauce

Hawaiian-Style Braised Pork – cubed pork loin slow-cooked in a lush island-inspired sauce, lightly sweet with a hint of spiciness

Spring Vegetable Paella – hearty vegetarian dish loaded with fresh vegetables and saffron rice

Beef Brisket with Beer and Onions – fresh beef brisket toped with sweet onions and red bell peppers, then braised until fork-tender in a zesty beer-brown sugar-chili sauce
